Description
Japanese Kodeba knives are traditional kitchen tools, highly valued for their precise fish cutting capabilities. They are distinguished by their thick, short blades, often handcrafted from high-quality steels such as Aogami or stainless steel. These knives are designed to deliver exceptional sharpness and remarkable durability, perfectly suited to Japanese culinary techniques.
Each Kodeba is unique and handcrafted, reflecting the craftsmanship and passion of Japanese artisans.
KODEBA stabs are designed for moderate spans and are easy to handle.
Our Kodeba stabs are handmade with passion by our team of professional shapers in our factory located in Savoie, in the Alps, using techniques perfected over more than 30 years.
The word “Kodeba” is written in Japanese as: 小出刃 (こでば).
- 小 (Ko) means “small”
- 出 (De) means “protrusion”
- 刃 (Ba) means “blade”
This perfectly reflects the compact size and refined finesse of Kodeba stabs with their small winglets.
All KODEBA stabs come with a set of 6 shims (+0.3, +0.6, +0.9, -0.3, -0.6, -0.9) and a neoprene cover.
